Whitebridge Honey

Whitebridge Honey is a family-run apiary operated by the Mathieson family — Aros, a retired policeman, and Neringa, a pharmacist with a passion for natural health, along with their young son Magnus. Located in the hamlet of Whitebridge on the south side of Loch Ness, Inverness-shire, the apiary sits at 720 feet above sea level, creating a challenging but unique environment for beekeeping. With over 20 years of experience, the family practises sustainable beekeeping and produces boutique honey that reflects the rich floral diversity of the local Highlands. The honey is truly raw — spun and passed through a coarse sieve only, retaining all natural antioxidants, enzymes, and antibacterial properties. Due to the short Highland season and unpredictable weather, only one crop is taken per year, meaning some years yield no surplus. Nectar sources include white clover, bell heather, wild radish, raspberry, ling heather, broom, gorse, rosebay willowherb, common knapweed, and marsh and creeping thistle — with scientific analysis identifying up to 30 different sources. Colour and flavour vary year on year, making each batch a unique speciality product prized by honey connoisseurs.
